The air valve prevents the wine from dripping during the service and it regulates the temperature. By partly blocking the air-intake, the wine flow is reduced, the wine remains longer in the ravi and ultimately the temperature is lowered further. By doing this the wine can be chilled to the desired temperature. This function becomes very important when serving several glasses in a row.
